Sauteed Cod with Lemon-Parsley Sauce

  Serve with green salad, vegetables, and garlic bread.

Halibut, sole, or tilapia can also be used with this recipe.
Ingredients:
  1 tablespoon   butter
  1 tablespoon   olive oil
  3 cloves   garlic, thinly sliced
  1/2 cup   chopped onion
  1 pound   cod fillets
    juice of 1/2 lemon
  1 1/2 tablespoons   parsley
  1 1/2 tablespoons   crumbled, dried thyme
    salt and pepper to taste
Directions:
  Heat the butter and oil in a skillet over medium-high heat until the foam subsides. Add the garlic and saute, stirring, for 5 seconds. Add the onion and saute for 1 minute. Add the cod and saute for 5 minutes, turning once (the fish will crumble). Add the lemon juice, parsley, thyme, salt and peper. Cover the skillet and cook the fish about 2 minutes, until the cod is opaque and flaky. Serve imediately.
