Marinated Chicken Skewers
by Jes Mostek
serves: 4
This is a great recipe for the grill, or for grilling indoors (in your oven under the broiler).

To save yourself some time, buy chicken breast tenders (so you don't have to cut the meat into strips yourself).
Ingredients:
  1 lb.   chicken breasts
  2   green peppers, optional
  1 can   pineapple chunks, optional
  4 servings   \"Teriyaki Marinade\"
    bamboo skewers
Directions:
  Cut the chicken into strips.

Prepare the marinade and marinate chicken for at least 15 minutes (overnight is even better).

Wash and remove seeds from peppers, then cut into large (2") chunks.

While the chicken is marinating and you're chopping up the peppers, soak bamboo skewers in water for a few minutes, up to an hour so they will not burn on the grill.

Preheat the barbeque to a high heat. Or preheat your oven to broil.

Thread chicken onto skewers like a snake, and in between each peice add a piece of bell pepper or pineapple.

Grill skewers, turning once, over charcoal for 4 to 6 minutes; or broil, until just browned and cooked through (about 15 minutes, turning once).
