Grilled Meatloaf Sandwices

  These sandwiches are so good, you'll find yourself making meatloaf just for the left-overs! Just be sure to use really good, yummy bread; that will really make the meal!
Ingredients:
  4 slice(s)   meatloaf, cut ˝” - 1” thick
  1/4 c.   olive oil, divided
  8 slices   wheat bread
  4 slice(s)   Muenster cheese
    Dijon mustard, to taste
    Ketchup, to taste
Directions:
  In a large skillet over medium heat, heat half of the olive oil until it “ripples” but doesn’t smoke. Add all slices of meatloaf to the heated skillet (you may need to do this in batches, or in two pans if you are making lots of sandwiches). Brown meatloaf slices on both sides.

Meanwhile, spread half of the bread slices (1 side only) with the mustard and the other slices with the ketchup. When the meatloaf slices are nicely browned, assemble the sandwiches so that 1 slice of meatloaf and 1 slice of cheese are between 1 piece of bread with ketchup and 1 piece of bread with mustard (with condiments facing in).

Add other half of the oil to the pan and heat until you see the oil ripple. Place the sandwiches in the skillet and brown on each side until slightly darkened and crispy (about 1 minute on each side).
