Chalupa Salad or "Chupalupa" Salad

  A healthy, mouth watering and fullfilling dish that keeps you coming back for more. And go ahead and come back, it's low in fat and calories BUT HIGH IN TASTE!
Ingredients:
  1   Head of lettuce
  1   bag of Lite Fritos (corn chips) (break to medium density)
  1   small red onion (diced)
  1   8oz can Ranch Style Beans (drained and rinsed)
  1   Large avocado (diced)
  1   Fat-Free Catalina Dressing
  1   6 oz bag Shredded Cheese
Directions:
  In a large bowl tear one head of lettuce to bite size leaves, add red onion and drained Ranch Style beans.

For your next step, you have a choice. The first one is called the traditional way and it goes as follows...

Add the Fat-Free Catalina Dressing, the broken corn chips and top with shredded cheese. TOSS and enjoy.

(The only trouble I have found with this version is IF YOU DO NOT EAT ALL YOUR DISH AT ONE TIME the left-overs get soggy and not too appetizing for later consumption.)

This is why I came up with "The Second Version"...and I call it "Chupalupa Salad".

After you have torn the lettuce and added it to a large bowl, I proceed with the red onion and drained Ranch Style Beans (same as above) BUT THEN, I distribute what will be eaten AT ONE SITTING in individual bowls.

You or yours can customize their own bowl by adding the ingredients of their choice.

The outcome can be all the same or each bowl CUSTOMIZED for individuality and great family participation (out-doing eachother).

Either way, it tastes great and is EXTREMELY HEALTHY.
