Spaghetti w/ Meat Sauce & Asparagus

Asparagus Side Dish

  This is a great side dish with aspagus, and grape tomatos. My 16 year old daughter loves it.
Ingredients:
  1 bunch   fresh asparagus, trimmed
  2/3 cup   water
  1/4 cup   olive oil
  1/2 cup   grated parmesan cheese
  10   grape tomatos halved
Directions:
  Combine the asparagus and water in a 10 inch skillet and place over medium heat; cover. Allow the asparagus to steam until tender, about 10 minutes; drain. Reduce heat to low and return the skillet to the heat. Drizzle olive oil over the asparagus; sprinkle with Paresan cheese. Add the grape tomatoes to the skillet and replace the lid. Allow to sit covered until the cheese melts and the tomatoes are slightly steamed, about 2 minutes. Serve.
Spaghetti w/ Ground Turkey Meat Sauce

  A quick and easy family favorite made lighter by using ground turkey instead of beef. Left overs are great packed for lunches the next day or you can freeze extras in individual portions which make for "fast food" on your next busy night.
Ingredients:
  1 box   Spaghetti Noodles (1 lb.)
  1 lb   Ground Turkey
  1 jar   Spaghetti Sauce (24 oz.)
  1 tsp   Salt (added to water)
  2 Tbsp   Olive Oil
  1 tsp   Fresh Ground Pepper
  1 tsp   Sea Salt
  1 tsp   Red Pepper Flakes (optional)
  1 bottle   Parmesan Cheese (optional)
Directions:
  Fill a stock pot half full with water, add 1 tsp. of salt to water, bring to boil. Add noodles and set a timer for recommended cooking time for your noodles as listed on the box. Heat 2 Tbsp of Olive Oil in a skillet with fairly deep sides and add your 1 lb package of ground turkey to the pan, season meat with salt, pepper and red pepper flakes to taste (skip red pepper flakes if you don't want any spice). Break up ground turkey as it browns, turning to cook both sides. Once meat is cooked drain the meat of any oil and put back into the skillet. Pour jar of spaghetti sauce over the browned turkey using low heat. Check timer to see how long your noodles have left, if close test by tasting one noodle. Once cooked to your liking, drain noodles and add to your meat sauce. Combine and then serve with Parmesan Cheese to be added individually.
