  An easy, one dish meal that makes a great entree for a GF family!
Ingredients:
  10 oz   box frozen chopped spinach, thawed
  1/2   green pepper
  1   onion
  1 lbs   lean ground beef
  15 oz   organic diced tomatoes
  16 oz   organic tomato sauce
  1 cup   uncooked rice
  1/4 cup   GF parmesan cheese
  3/4 tsp   GF chili powder
  1/2 tsp   salt
  1/4 tsp   black pepper
  1/2 cup   water
Directions:
  Preheat oven 400 F
Squeeze spinich dry. Place in large bowl
Chop the green pepper and onion into small pieces. Add them to the bowl.
Sprinkle little chunks of ground beef into the bowl.
Addf the tomatoes, tomato sauce, rice, cheese, chili powder, salt, black pepper, and water. Stir well to blend, breaking up meet and spinich with the edge of a spoon.
Spray a 2-quart casserole with gluten-free nonstick spray. Place the mixture in the casserole. Plack it down lightly, and smooth the surface.
Cover the casserole with a lid or foil. Bake for 1 1/4 hours.
