  nice party dish served with frito scoops or nacho chip scoops
Ingredients:
  1 can   black eyed peas
  1 can   corn
  1 can   black beans
  1 small jar   pimentos, chopped
  1 small jar   jalapenos, chopped
  1 medium   red onion, chopped
  1 cup   celery, chopped
  1 cup   olive oil
  1/2 cup   apple cider vinegar
  3/4 cup   sugar
Directions:
  Place all the canned and chopped vegetables in a colander- rinse. Drain. In a small saucepan, combine oil, vinegar and sugar Heat to dissolve sugar. Cool. Add to the bean mixture. Marinate over night Pour off marinade before serving. Set in colander to drain. Serve with Frito Scoops or Nacho Chip Scoops. Enjoy!
