Quick and Easy Shepherd's Pie

  Easy Shepherd's pie using Pakaged brown gravy mix.
Ingredients:
  1 lb   ground beef
  1 pkg   powdered brown gravy mix
  1 1/2 C   frozen corn kernels
  1 C   water
  5   russet potatoes, peeled and cubed
  4 Tbsp   butter
  1/4 C   milk
  1/2 tsp   salt
  3/4 C   shredded cheddar cheese
Directions:
  Preheat oven to 350F. Place potatoes in a large pot and cover with water. Bring to a boil, reduce heat and simmer 20 min or until tender. Drain and mash with butter, salt and milk. Brown and drain ground beef in a large skillet over med-high heat. Stir in brown gravy mix and water. Bring to a boil, reduce heat and simmer about 5 min. or until thickened. Meanwhile, heat frozen corn according to package directions, drain. place ground beef in bottom of a 2-3 qt round casserole dish. Top with corn kernels. Drop mashed potatoes in large dollops on top of corn to cover, smooth with rubber spatula if desired. Sprinkle with cheddar cheese and bake uncovered, 15-20 minutes to melt cheese and heat through.
