Arielle's Spinach and Mushroom Pasta

  This is a healthy pasta dish recreated from a restaurant dish.
Ingredients:
  6 cloves   garlic
  1 bag   washed spinach
  1/2 lg container   mushrooms cut into quarters
  5 leaves   fresh basil
  1/2 cup   olive oil
  1/2 cup   white wine
  1/2 cup   vodka
  1 tsp   chicken bullion
  1/2 tsp   salt
  1/2 tsp   pepper
  1 box   pasta
Directions:
  Put olive oil and garlic in large pan and let sit on cold burner for about 20 min.
Boil water for pasta.
Start burner with olive oil and garlic and let simmer for several minutes until hot. Add bouillon, wine, vodka, salt and pepper. Let cook for several minutes. Add mushrooms and simmer for several minutes. Put pasta in boiling water. Put bag of spinach in to cook down. Add basil. Add more oil if necessary (if mixture looks to dry). Add pasta when cooked and mix in pan. Add more fresh pepper and salt to taste. Serve at once. Add Parmesan cheese if desired.
