Swedish Meatballs with Cream Sauce

  Probably the most famous Scandinavian dish, every family seems to have their own recipe! Here is my family's recipe. Serve with boiled red potatoes and lingonberry sauce.
Ingredients:
  1 lb   ground beef
  1 lb   ground pork
  1 cup   bread crumbs
  2   eggs
  1 Tbsp   minced onion
  2 sm.   potatoes
  1/4 tsp   ground pepper
  1/4 tsp   ground ginger
  1/4 tsp   nutmeg
  1/4 tsp   allspice
  1 cup   heavy cream
  1 cup   beef stock
  2 Tbsp   flour
  2 Tbsp   butter
Directions:
  1) Peel potatoes; using a cheese grater, shred potatoes until completely grated.

2) In a large mixing bowl combine:
beef
pork
bread crumbs
eggs
onion
grated potato
pepper
ginger
nutmeg
allspice

3) Roll meatball mixture into 1" balls.

4) Fry meatballs in batches over medium-high heat in a large skillet coated with butter, stirring often; meatballs are done when well-browned and when juiced are clear.

5) When all meatballs are fried, bake in a covered casserole dish at 350 degrees for 30 minutes. Do not clean the skillet

While meatballs are baking, make the cream sauce:

1) Skillet should be on medium heat

2) Add 2 Tbsp butter, stirring to lift meat flavors.

3) When butter is melted, sprinkle in flour to make a roux.

4) Slowly add beef stock, stirring constantly.

5) Add cream.

6) Bring to a boil, then reduce heat and simmer to desired consistency.

When meatballs are finished baking, serve with cream sauce, boiled potatoes and lingonberries for an authentic Swedish meal!
