  Chicken or Beef Fajitta's
Ingredients:
  1 Whole   Chicken Breast cut into small strips
  1 Tbl   Olive Oil
  1 Tbl   Taco Seasoning
  1/4 tsp   Kosher Salt
  1/4 Whole   Onion cut into small strips
  1/2 Whole   Green Pepper
  1/2 Whole   Red Pepper
  1/2 Cup   Sour Cream
  1/2 Cup   Salsa (Optional)
  1/2 Cup   Cheese(Optional)
  1 Can   Black Beans (Optional)
  1 Cup   Minute Rice
  1 Can   Mexican Style Diced Tomatoes
  1/2 Cup   Water
  6 Whole   Flour tortilla's (8 in)
  6 Whole   Corn Tortilla's (8 in)
Directions:
  Heat skillet and olive oil, add chicken cook chicken till juices run clear, add taco seasoning and salt, stir and simmer for about 1 min., add onions cook till onions are saute'd, add green peppers and red peppers.Cook about 1 minute, simmer till Peppers re just tender, but still crisp.

While chicken is cooking cook in microwavable bowl or pot the black beans.

While chicken is simmering with onions start rice, strain tomatoe juice into measuring cup, add additional water to meet required amount for rice, stir in water, remaining tomatoes and rice cook for 5 minutes on high.

build fajitta's with tortilla, chicken, rice, beans, salsa, cheese, and sour cream.
