"Dog Hot Dish" Goulash

  Macaroni casserole with ground beef and a sweet and savory tomato sauce. This is an old family recipe for us. At one point, a child (who has been an adult for a long time now), being unable to pronounce his Grandma Dowd's name, referred to her casserole as "Dog Hot Dish," and the new name for the old favorite just stuck!
Ingredients:
  1 c.   Elbow Macaroni, uncooked
  1 lb.   ground beef, lean
  2 c.   celery, diced
  1/4 c.   Green pepper, diced
  1 c.   mushrooms, chopped (optional)
  2 (10 oz.) cans   condensed tomato soup
  1 T.   oregano
  1/2 tsp.   garlic powder
  1 T.   molasses
  1/4 c.   onion, grated
    salt and pepper to taste
  3/4 c.   grated cheese (optional)
Directions:
  -Preheat oven to 350 degrees F.
-Fill a large sauce pan with water, and set to boil. Par-boil elbow macaroni noodles, 4-5 minutes. Noodles should be still more firm than even al dente.
-In a large frying pan, brown ground beef. When the meat is cooked, add the celery and continue to cook for 3 minutes, leaving celery only partially cooked.
-Meanwhile, in a medium bowl, whisk together sauce ingredients: tomato soup, oregano, garlic, molasses, salt & pepper, and onion.
-Combine, noodles and ground beef mixture. Cover with sauce. Stir until well-coated. Transfer mixture to a 9 x 13" cake pan or large casserole dish. If desired, top with grated cheese (add more or less to taste).
-Cook in 350 degree F oven for 30 minutes.
