Mushroom-Spinach Calzones***

  Weight Watchers New Complete Cookbook Page 330 (Points value 5)

About 1.5-2 hours prep/cook time!!!
Ingredients:
  2/3 Cup   Warm Water
  1 Pkg   Quick Rise Yeast
  1/4 Tsp   Sugar
  1 Cup   Bread Flour
  1/2 Cup   Whole Wheat Flour
  1/2 Tsp   Salt
  1   Onion, Chopped
  1 Tsp   Oregano, Dried
  3 Cups   Mushrooms, Coarsley Chopped
  10 Oz   Spinach, Thawed & Squeezed Dry
  3/4 Cup   Mozzarella Cheese, Shredded
Directions:
  1. Spray baking sheet with nonstick spray.

2. Combine water, yeast, and sugar in small bowl, stirring to dissolve. Let stand until foamy, about 5 minutes.

3. Combine bread flour, whole wheat flour, and salt in food processor; pulse until mixed well. With machine running, scrape yeast mixture through feed tube, processing just until dough forms a ball. Kneed dough by pulsing until smooth and elastic, about 3 minutes.

4. Spray large bowl with nonstick spray, place dough in bowl, turning to coat. Cover bowl with plastic wrap and let dough rise in warm place (80-85F) until doubled in volume, 30-45 minutes.

5. Meanwhile spray large nonstick skillet with nonstick spray and set over medium heat. Add onion and oregano; cook stirring until onion is softened, about 5 minutes. Transfer to plate. Add mushrooms to skillet and cook, stirring occationally, until mushrooms release their liquid and it evaporates, about 15 minutes. Remove skillet from heat; stir in onion and spinach.

6. Punch down dough in bowl. Turn dough out onto lightly floured work surface; cut into 4 equal pieces. With lightly floured rolling pin roll out each piece of dough into 7in round. Place 1/4 of vegetable mixture in center of each dough round; top each with 3 Tbs mozzarella. Fold dough over filling to form half-moon shape. Press edges together firmly to seal. Place calzones on prepared baking sheet. Cover loosley with plastic wrap and let rise in warm place (80-85F) 30 minutes.

7.Meanwhile place racks in upper and lower 1/3rd of oven. Place roasting pan on lower rack; add enough hot water to come 2 inches up sides of pan. Preheat oven to 400F

8. Bake calzones on upper rack until lightly browned, about 20 minutes.
