Grilled Steak Sandwiches with Golden Onions***

  Weight Watchers New Complete Cookbook Page 333 (Points Value 9)
Ingredients:
  1 Tsp   Olive Oil
  2   Onions, Thinly Sliced
  2 Tsp   Sugar
  2 Tsp   Red Wine Vinegar
  1/4 Tsp   Salt
  1/4 Tsp   Black Pepper
  1 Lb   Flank Steak
  2 Tbs   Dijon Mustard
  8 Slices   Whole Grain Bread
  1 Cup   Baby Arugula, Lightly Packed
Directions:
  1. Heat oil in medium nonstick skillet over medium-high heat. Add onions and sugar; cook stirring, until onions are golden, about 10 minutes. Add vinegar, half of the salt and pepper, cook, stirring constantly, until vinegar is evaporated, about 30 seconds. Remove skillet from heat.

2. Meanwhile, spray broiler rack with nonstick spray. Preheat broiler

3. Sprinkle steak with remaining salt and pepper. Put strak on prepared broiler rack and broil 5 inches from heat until instant-read thermometer inserted into side of steak registers 145F for medium, about 5 minutes per side. Let stand 5 minutes. Cut against grain into 12 slices.

4. Spread mustard evenly on 4 slices of bread; top evenly with arugula. Place 3 slices of steak in each sandwich; top each with 1/4 Cup of onion. Cover with remaining bred.
