Cheese Manicotti

  Messy to make, but tasty manicotti.
Ingredients:
  1 pint   part-skim ricotta cheese
  8 oz.   shredded mozzarella
  3/4 c.   grated Parmesan
  2   eggs
  1 tsp.   dried parsley
    salt & pepper to taste
  16 oz.   jar spaghetti sauce
  5 1/2 oz.   manicotti
Directions:
  Cook manicotti according to package directions - do not overcook; drain & rinse with cold water. Combine ricotta, mozzarella, 1/2 c. Parmesan, eggs, parsley, salt & pepper in large bowl. Pour 1/2 c. spaghetti sauce into baking dish. Fill each manicotti shell w/ about 3 T. chesese mixture & lay over sauce. Pour remaining sauce on top & remaining Parmesan. Bake at 350 degrees for about 45 minutes.
