BAKED SALMON AND VEG RICE

  SALMON AND VEG RICE
Ingredients:
  3   SAMON FILLET
  1 CUP   MAYO
  1 BUNCH   CILANTRO
  3   TOMATOES
  3 CUPS   RICE
  1 BAG   MIXED VEG
  1 CAN   TOMATO SAUCE
  1 TBLP   SOFRITO
  1 pkg   SAZON
  2 TBLP   LIMON
Directions:
  PREHEAT OVEN TO 375 in a bowl stir together mayo and all the herbs. place salmon fillet on a baking sheet and spread with the mayo mixture. Bake for 30 to 40 minutes, until salmon is easily flaked with a fork . add 1 tblp of canola oil to a rice pan and the sofrito and tomato sauce add the veggies and 1 pckg of SAZON ACCENT for color, add 4 cups of water when is began to boil add the rice and cover for 10 minutes. dont forget to add salt to your taste.
