Low Carb Chicken 'n Dumplings

  Conventional dumplings with a low carb twist using leftover chicken in a pot
Ingredients:
  1 c   whole wheat flour
  1 c   soy flour
  2 tsp   baking powder
  1 c   milk
  4 Tbs   real butter
Directions:
  Mix dry ingredients together well. Add butter and cut in with a fork. Add milk as needed to get the desired texture for dumplings (could be as much as 1 1/2 cups of milk as it seems that the soy flour and wheat flour combined absorb more moisture than white flour). Drop onto the top of the cooked chicken combination left over from Chicken in a pot and cover. Cook for approximately 20-25 minutes/until the dumplings are done.
