Chicken in a Pot

  versatile crockpot chicken and veggie recipe
Ingredients:
  3 ea   medium carrots
  2 ea   medium onions
  1 ea   whole chicken (or chicken pieces) cut up
  1 tsp   dried basil
  2 ea   ribs celery
  1/2 c   chicken broth
  1 1/2 tsp   salt
  1/2 tsp   pepper
Directions:
  Cut up the carrots and celery into bite size pieces. Chop the onions.

In slow cooker place carrots, celery and onion. Top with chicken pieces and add broth. Cook and cove on low to medium heat for 7-9 hours.

This recipe is awesome by adding more broth to create chicken and noodles, even more broth for chicken and noodle soup or thicken the broth at the end of the cooking time with a bit of cornstarch by putting the crockpot on high until the liquid starts bubbling and stir in about 2 -3 TB. of liquified cornstarch. After thickend make some good old fashioned dumplings and drop on the top and cover until the dumplings are done.

****note to use for chicken / noodles or dumplings the chicken has to be deboned.****
