Croque Monsieur

  A decadent french take on grilled cheese. Fancy, yet comforting.
Ingredients:
  4 tbsp   butter, divided
  2 tbsp   flour
  1 cup   milk
  1/2 tsp   salt
  1/8 tsp   nutmeg (just a dash)
  1/8 tsp   cayenne pepper (a dash)
  1/8 tsp   black pepper (a dash)
  8 slices   good bread, white or other
  1/4 cup   Dijon mustard
  1/2 lb   ham, thin sliced
  1/3 lb   Gruyere cheese, thinly sliced
  2 oz   shredded Gruyere (1 cup)
Directions:
  Make a bechamel sauce: Melt 2 tbsp butter in a saucepan. Add flour and whisk a couple minutes until smooth but not browned. Whisking constantly, slowly add milk and cook while stirring constantly until thickened, a few minutes more. Remove from heat and add salt, nutmeg, cayenne and black pepper. Place a piece of plastic wrap directly on the surface of the sauce and set aside.

Begin heating a large skillet or griddle over med-low heat. Lay out 4 slices of bread, spread with mustard and layer with the ham and sliced cheese, and top with the remaining bread slices. Press gently. Butter the top of each sandwich and place in the hot pan butter side down. Butter the top of each sandwich in the pan while the first side cooks until golden, flip and brown the other side until the cheese is melted.

Transfer sandwiches to a baking pan that they will all fit in. Spread the top of each sandwich with some of the sauce and sprinkle with the shredded cheese, dividing both the sauce and the cheese evenly. Place the pan under the broiler until bubbly, melted and golden, about 2-3 minutes. Serve immediately.
