Bake potatoes in microwave for 6 minutes on high. Let cool, then peel potatoes and cut off pointed ends. (If you score the potatoes lengthwise, they will peel easily by hand after they are cooked.) Cut into eight wedges. Line cookie pan with foil and spray with cooking spray. Place wedges upright, spray wedges with cooking spray and dust with herbs and spices of your choice. Bake in 350 oven for 20 min or until tender inside and crisp outside.
