speedy black bean soup

Ingredients: |

1 tsp |
|
olive oil |
|
1 small |
|
onion minced |
|
2 15 oz cans |
|
black beans - 1 can drained |
|
1 1/2 cup |
|
low fat low sodium chicken broth |
|
1/2 cup |
|
dry red wine |
|
1 tsp |
|
cayenne pepper |
|
1 fresh |
|
ground pepper to taste |
|
6 tbsp |
|
low fat sour cream-garnish |
Directions: |
|
1 in stockpot over medium high heat heat oil. add onions and saute for 5 minutes
2. add teh drained cans of beans and chicken broth. simmer 5 minutes
3. puree the other can of beans with the liquid. add to the soup.
4. add wine, ground pepper, cayenne pepper and simmer for 10 minutes.
5. add garnish if wanted
