speedy black bean soup

  serving size 1 cup

Ingredients:
  1 tsp   olive oil
  1 small   onion minced
  2 15 oz cans   black beans - 1 can drained
  1 1/2 cup   low fat low sodium chicken broth
  1/2 cup   dry red wine
  1 tsp   cayenne pepper
  1 fresh   ground pepper to taste
  6 tbsp   low fat sour cream-garnish
Directions:
  1 in stockpot over medium high heat heat oil. add onions and saute for 5 minutes
2. add teh drained cans of beans and chicken broth. simmer 5 minutes
3. puree the other can of beans with the liquid. add to the soup.
4. add wine, ground pepper, cayenne pepper and simmer for 10 minutes.
5. add garnish if wanted
