Zucchini (apple) pie

serves: 6
  delicious pie with no apples, but tastes just like apple pie!
Ingredients:
  4 cup   Zucchini (peeled and sliced)
  1 1/4 cup   sugar
  1 1/2 tsp   cinnamon
  1 1/2 tsp   cream of tartar
  2 Tbs   flour
  2 Tbs   lemon juice
  1   pie crust
Directions:
  Cook zucchini in saucepan until translucent. Soak in ice water 5 minutes. Drain.
Put a little flour and sugar in bottom crust to keep from getting soggy. Combine zucchini with remaining ingredients. Pour into crust, cover with top crust. Sprinkle with more butter and sugar. Seal crust. Bake at 400 degrees F for 40-50 minutes.
