Whole Wheat Macaroni and CHeese

  A healthy switch from that highly processed stuff in the box.
Ingredients:
  1 c   dried whole wheat macaroni, boiled
  2 Tbsp   butter
  2 Tbsp   Whole wheat flour
  1 c   milk
  1 c   whatever grated cheese you prefer
    salt and pepper to taste
    optional topping:grated parm or WW breadcrumbs
Directions:
  Melt the butter in a sauté pan over medium heat.
Whisk in the flour and keep whisking for about 1 minute until the roux (which is equal parts flour and butter or oil) starts to darken, but does not burn.
Quickly whisk in the milk and turn down the heat to low. Keep whisking until any lumps of flour dissolve.
Stir in the cheese and once it melts add the cooked noodles. Season with salt and pepper.
Serve immediately and enjoy
