Vietnamese Beef Stuffed Grape Leaves

  I love the bright flavors of this appetizer and the dipping sauce is also great with egg rolls.
Ingredients:
  2 tbsp   green onion, chopped
  1   garlic clove, minced
  2 tbsp   peanut oil, plus more for brushing on
  2 tbsp   peanuts or cashews, minced
  2 tbsp   lime zest
  1 1/2 tsp   sugar
  1 1/2 tsp   fish sauce
  1/2 tsp   chili sauce or siracha sauce
  1/4 tsp   salt
  8 oz   lean ground beef
  1 jar   grape leaves, rinsed and drained (16)
Directions:
  Combine everything except the beef and mix well. Crumble beef over mixture and gently combine. Place 1 Tbsp filling on each leaf and roll up, tucking sides in. Brush with peanut oil. Cook on grill pan 10 minutes over medium heat until cooked through and firm, turning once. Serve with Asian Lime Dipping Sauce.
