Ingredients: |

10 oz |
|
frozed chopped spinach |
|
3/4 c |
|
liquid egg substitute |
|
1/4 c |
|
green bell pepper, diced |
|
1/4 c |
|
onion, diced |
|
3 drops |
|
hot-pepper sauce (optional) |
|
3/4 c |
|
reduced fat cheese, shredded |
Directions: |

Microwave spinach for 2.5 minutes on high. Drain excess liquid. Line muffin tin with foil baking cups. Spray cups with cooking spray. Combine egg substitute, spinach, cheese, peppers and onion in bowl. Mix well. Divide evenly into muffin cups.
Bake 20 minutes at 350 degrees.
