Super Powered Tacos

  Add veggie purees to beef mix and don't worry about what the kids are (or aren't) putting on their tacos.
Ingredients:
  12 shells   Hard shell
  1 lb.   super lean ground beef
  1 cup   shredded cheese
  1 pkg   taco seasoning
  1 cup   shredded lettuce
  1 cup   tomatoes, diced
  1/2 cup   canned crushed tomatoes
  1/2 cup   carrot or butternut squash puree
Directions:
  Make tacos as usual, but instead of using water for sauce mix substitute in the crushed tomatoes and veggie puree. The texture is a little different than normal, BUT good and easy to get used to. If kids don't like change, try it with just the crushed tomatoes - blends more thoroughly. Or use a red pepper puree with the crushed tomatoes, also blends nicely.

Freeze purees and pre-cooked meat in premeasured quantities to make prep easier.
