Spinach Lasagna Roll Ups

  Good with garlic bread.
Ingredients:
  1 lb   lasagna noodles
  15 oz   ricotta
  1 cup   shredded mozzarella
  1/4 cup   grated parmesan
  1   egg
  10 oz   frozen spinach
  2 1/2 cup   marinara sauce
    salt and pepper
    non-stick spray
Directions:
  Boil a large pot of water with a dash of salt
When boiling add noodles and cook for 12-15 minutes (we want soft but not soggy)
When done drain in a colander and set aside
Thaw frozen spinach in microwave and squeeze out excess fluid
Combine spinach, ricotta, mozzarella, parmesan, egg, pepper, and salt until well blended
Preheat oven to 400 degrees and spray 9x13 dish with cooking spray
Place a few tablespoons of filling on each noodle and roll up
Place in 9x13 dish
Cover rolled up noodles with marinara sauce
Cover dish with foil and bake for 30 minutes
