Spicy Sausage and Orzo

  Easy to prepare and easy to love, this colorful dish takes orzo to new heights with smoky-sweet, red peppers and spicy Italian sausage. If you aren't a fan of the spice, kick it down a notch with sweet Italian sausage.
Ingredients:
  6 cups   Chicken Broth
  1 lb   Orzo
  2 tbls   Extra Virgin Olive Oil
  1/2 lb   loose hot Italian sausage
  1 clove   garlic, minced
  1/2 cup   grated parmesan
  1 each   red pepper
  1/2 each   yelllow onion
Directions:
 
6 cups chicken broth
1 (1-pound) package Orzo
2 tablespoons Extra Virgin Olive Oil
1/2 pound loose hot Italian sausage
1 clove garlic, minced
1 red pepper
Coarse Sea Salt and freshly ground pepper
1/2 cup Grated Parmesan
1/2 yellow onion

Directions:

Bring chicken broth to a boil in a large saucepan. Cook pasta according to package instructions, but in broth.

Saute the onions and pepper and set aside.

In another large saucepan on a medium-high setting, heat the olive oil. Once hot, sauté sausage until golden brown and cooked through, about 6 minutes. Break up larger pieces with a wooden spoon. Add the garlic,peppers,onions to the skillet and cook together with sausage for another 2 minutes.

Drain pasta, reserving about 1/2 cup of the cooking broth. Toss hot pasta with sausage and pepper mixture in saucepan. Add pasta water if necessary to smooth sauce. Finish with salt and pepper to taste. Cook together for an additional 2 minutes.

Serve sprinkled with Parmesan.
