Southwest Cobb Layered Salad

You can make this ahead and toss just before serving. A great main dish salad. |
Ingredients: |

1/2 cup |
|
salsa |
|
1/4 cup |
|
Italian dressing |
|
1/2 tsp |
|
cumin |
|
15 oz |
|
black beans, rinsed and drained |
|
1 |
|
red bell pepper |
|
1/2 cup |
|
green onions, chopped, (1 bunch) |
|
8 oz |
|
baby spinach, washed |
|

|
bacon strips, cooked crisp |
|
4 |
|
eggs, hard boiled |
|
4 oz |
|
feta cheese, crumbled |
|

|
tomato, sliced, optional |
Directions: |
|
Mix salsa, dressing and cumin in a large salad bowl. Layer the rest of the ingredients over the dressing in the order given. Refrigerate until ready to serve. Toss just before serving.
