Soda Bread

  Tasty and easy. Minimal kneading and no rising, makes this a fast fix to have with dinner. Great toasted too.
Ingredients:
  4 cups   flour (can use half whole wheat)
  2 tsp   baking soda
  1/4 tsp   salt
  2 1/2 cups   buttermilk
Directions:
  Preheat oven to 375 degrees. Grease a baking sheet. Sift the flour, soda and salt into a large mixing bowl. Add buttermilk until you have a soft, not too moist dough. You may not need to use all the buttermilk. Turn the dough out onto a floured surface and knead lightly until smooth and well mixed. Press dough into an 8 inch round and place on baking sheet. With a floured knife cut a deep cross into the center of the round, going about 1/3 of the way through the dough. Brush dough with water and dust with a little white flour. Bake for 20-30 minutes or until the bread sounds hollow when tapped with fingers. Let cool 15 minutes before slicing and serving.

Optional: Make your own buttermilk by souring 2 cups of milk with 2 tsp lemon juice or vinegar. Stir and let stand 15 minutes before using.
