Snowy Mountains

  "Snowy Mountains" are mini meat-loaves smothered in mashed potatoes (the "snow"), topped with broccoli spears (the "trees"), & sprinkled with Parmesan (more "snow"). Kids will love helping with this recipe as well as eating their creations!

If you're short on time, substitute browned ground beef for the mini meat loaves, boxed mashed potatoes instead of making the mashed potatoes from scratch, and frozen cut broccoli for the fresh broccoli. It will obviously taste a bit less "homemade," but it'll cut your prep time down to about 10 minutes.
Ingredients:
  1 lb.   ground beef
  10   crackers, crushed
  1   egg
  1 (10 oz.) can   cream of mushroom soup, divided
  4 lg.   potatoes
  1/2 c.   sour cream
    salt and pepper to taste
  1 bunch   broccoli
    parmesan cheese
Directions:
  Preheat oven to 375°F

Spray or brush a muffin tin with cooking oil.

In a medium mixing bown, combine the ground beef, crushed up crackers, egg, and about 3/4 of the can of condensed soup.

Put a heaping spoonful of the meat mixture into each of 12 greased muffin cups.

Bake mini meat-loaves in preheated oven for 20-30 minutes, until the center of each mini meat-loaf is cooked through.

Meanwhile, cook the potaoes and the broccoli.

Peel, chunk, and boil your potatoes. Drain and mash potatoes with remaining condensed soup, the sour cream, and the salt & pepper.

Cut the stem off of the broccoli bunch. Cut into bite-sized "tree" pieces. Fill a pan that has a tight-fitting lid with about 2 inches of water, bring it to a boil, and add the broccoli, using a steamer basket if you have one available (it's not a big deal if you don't have one). Steam the broccoli for 3-5 minutes, until brocolli is bright green and is still a bit firm (not crunchy, but not mushy).

To assemble each "Snowy Mountain," place a mini meat-loaf (or 2) on the plate, top with the mashed potatoes, plant several broccoli trees, and spinkle with a fresh dusting of Parmesan snow.
