Slow Cooker Pepper Steak

Ingredients: |

1 1/2 lb. |
|
boneless round steak (or cheap roast) |
|
2 med |
|
onions |
|
1 clove |
|
garlic |
|
1/4 tsp |
|
ground ginger |
|
1 c |
|
beef broth |
|
3 Tbs |
|
cornstarch |
|
1/4 c |
|
cold water |
|
2 med |
|
green peppers |
|
2 med |
|
tomatoes, wedged |
|
6 c |
|
cooked rice |
|
2 Tb. |

soy sauce |
Directions: |
|
Cut beef into 6 servings. Spray skilled with cooking spray. Cook meat in skillet about 8 minutes until browned.
In slow cooker layer beef, onions, garlic, giner. In small bowl mix broth and soy sauce and pour over beef.
Cover & cook on low 7-9 hours, til beef is tender.
IN small bowl mix cornstarch & water, gradually stir into beef mixture. Stir in bell peppers. INcrease heat to high, cover and cook 10-12 minutes until slightly thickened. Stir in tomatoes and cook 3-5 minutes until tomatoes are heated through.
Serve over rice.
