Refrigerator Strawberry Jam

  Using fresh strawberries is the best for this fresh fruit spread. A yummy way to use up strawberries that is quick and doesn't require as many steps as traditional canning. This recipe lasts about a week and makes two jars which I love because it's always nice to make an extra for a neighbor or friend. If you want just one jar use half the amounts listed below.
Ingredients:
  4 Cups   Fresh Strawberries (stems removed)
  2 Cups   Fresh Rhubarb Stems (chopped)
  6 Tbsp   Honey
  6 Tbsp   Chia Seeds
Directions:
  Combine strawberries, chopped rhubarb, honey and chia seeds in your blender. Pour into clean jar or tight sealing container and refrigerate. Makes enough to full two medium jars. Wait to use your jelly until after 24 hrs so the chia seeds can fully expand and thicken your spread. Keeps for about a week in your refrigerator.
