QuickCurry Fish

  Nice to serve with Brown Rice. Quick to prepare
Ingredients:
  4   Fish of your choice fillets
  1 cup   chopped onions
  1 tsp   grated lemon rind
  1 cup   Tinned tomato chunks
  1   Bay leaf
  2 cups   water
  0.50 cup   wine vinegar
Directions:
  Chop onions, and fry with spray and cook in non-stick pan
When tender add curry powder, lemon rind and bay leaf. Cook getly for 5 minutes.
Stir in water and season to taste.
Cook uncovered for 20 minutes
Add the fish cut into bite size pieces and cook until tender for approximately 10 minutes
Stir in vinegar and serve hot, garnish with lemon slices
