Potato and Leek Soup

Ingredients: |

2 Slices |
|
Bacon, chopped |
|
4 |

Leeks, chopped |
|
4 |

Medium potatoes, chopped |
|
2 cans |
|
chicken broth |
|
2 cans |
|
water |
|
1 |
|
Onion, chopped |
|
1 C |
|
Heavy cream |
|
|
|
Salt and pepper to taste |
|
|
|
Shredded cheddar cheese, optional |
Directions: |
|
Saute bacon in heavy saucepan for a few minutes.
Add onion and saute until brown.
Add leeks and saute for 2 minutes, stirring constantly.
Add potatoes, chicken broth, water, salt and pepper.
Bring to a boil and simmer 40 minutes.
Add heavy cream and bring to a boil again.
Delicious topped off with shredded cheddar cheese.
