1. in large skillet over medium heat, heat the olive oil. add the pork slices and saute on each side for 6-7 minutes until no pink remains. remove pork from the skillet.
2. in teh pan drippings, saute the onions for 10 minutes.
3. Add the evaporated milk, mustard and rosemary. bring to boil. Lower to a simmer.
4. Add the pork and simmer for 5 minutes
5. Add the chives, parsley and pepper. Simmer for 3 more minutes.
