Pork Balls on Vermicelli

  Vietnamese style vermicelli dish
Ingredients:
  1 pack   Vermicelli Noodles
  99.99 g   Pork mince
  1 bunch   Mint/Coriander Leaves
  4   spring onions
  2   chillies
  2 Tbsp   Fish Sauce
  2 Tbsp   Lime juice
  2 Tbsp   Sugar
  99.99 mL   water
  4 Tbsp   roasted peanuts
  8   Cherry tomatoes
  1   Cucumber
    salt&pepper
  1 clove   garlic
Directions:
  Make meatballs by mixing mince, chopped herbs, spring onions and 1 chilli. Bake in oven till golden brown.
Soak vermicelli noodles in boiling water till tender. Drain and divide into serving bowls.
Place meatballs on top, garnish with fresh herbs, spring onions, peanuts, tomatoes(halved), cucumber(cut into matchsticks).
Make dressing by mixing sugar, lime juice, fish sauce, chopped chilli, chopped garlic and water. Divide dressing into four bowls poruing over all ingredients.
