Plantation Peanut Soup

  Peanut Soup
Ingredients:
  2 T   butter
  1 lg   onion
  1/2 cup   tomato sauce
  1/2 tsp   dried thyme
  1/8 tsp   black pepper
  pinch   nutmeg
  2 cups   beef or chik broth
  1 cup   creamy or chunky p.butter
  1 1/2 cups   milk
  2 T   chopped chives
Directions:
  Melt butter in 2 qt saucepan over moderate heat, add onion and cook uncovered for 5 min or until soft.

Stir in all but chives. simmer, stirring occasionally, for 10 min.

If you wish, puree soup, then return soup to saucepan and reheat. Do not let soup boil. Stir in chives.
