Pierogies with peppers & onions

Ingredients: |

Extra Virgin Olive Oil |
|
1/2 |

1/2 Purple Onion, julienned |
|
1 1 |
|
Medium red pepper, julienned |
|
1 1 |
|
Meduim green pepper, julienned |
|
2 |
|
Cloves garlic, finely minced |
|
2 Tbsp |
|
Butter |
|

|
Cheddar cheese pierogiesq, thawed |
|
1/4 cup |
|
1/4 cup light cream |
|
2 Tbsp |
|
Flour |
|
1 tsp |
|
Pepper |
Directions: |
|
*Saute purple onions in Extra Virgin Olive Oil in large skillet over medium heat, stirring freaquently for about 2 minutes just until barely transparent
*Add peppers and cook about 2 more minutes until they are barely tender
*Add garlic and cook for 1 minute
*remove from pan into bowl
*Add butter to pan and melt
*Add pierogies to pan and cook about 2 minutes on each side, do not allow to brown
*Remove to serving platter
*Mix cream, flour and pepper in container with lid and shake until blended
*Add to skillet and bring just to a boil
*Reduce heat and simmer until thickened
*Add veggies and cook 1 minute or until heated through
*Pour over pierogies and serve
