Pesto Chicken Breast With Summer Squash

  Easy Skillet Meal
Ingredients:
  2 tbl   Pesto Suace
  4 small   Bonless Skinless Chicken Breast
  2 cups   Chopped Zuchinni
  2 cupps   Chopped Yellow Squash
  2 tbls   Shredded Parmesean Cheese
Directions:
  Skim oil off of pesto to make 1 tablespoon of oil
Heat oil in heavy cast iron or no-stick skillet over
medium heat
Add chicken and cook for 4 minutes
Turn chicken and add zucchini and squash
Cook for 4-to 6 more minutes, until chicken is done
and veggies browned and crisp, (make sure to stir
veggies a couple of time to brown evenly)
Garnish with Parmesan
