Perogies

  Polish dumplings, filled with potatoes and onion or cheddar. These sometimes come with bacon, so be sure to choose a variety without meat. These are perfect for a Meatless option.
Ingredients:
  1 large   Batch of Homemade Perogies (or bag of frozen)
  1 large   Onion sliced
  3 tbsp   butter or margarine
  3 tbsp   Up to 3 tbsp oil
  1 cup   Shredded Sharp Cheddar
    Sour Cream
    Salt and Pepper to taste
Directions:
  Boil water in a large pot and drop perogies in to boil for a few minutes.

In a heavy skillet melt butter and oil together. Perogies will float in water when ready to saute. Transfer from pot to skillet for browning. Add onions and saute over med/high heat until desired colour.

They are edible immediately out of the water, just toss in butter to coat. My family prefers them sauted until golden crispy.

Serve with sour cream, shredded cheddar
