Orzo and Spinach

Ingredients:
  4 oz   Julienne shredded fresh spinach
  1/2   Small julienne radishio
  1/3 C   Sun dried tomatoes, chopped
  2 Tbsp   Capers
  4 oz   orzo pasta
  1 Tbsp   minced garlic
  1/4 C   Juice from lemon with zest
  1/4 C   Olive oil
  1/3 C   Fresh parmesan
Directions:
  Heat olive oil.
Add garlic.
Add zest and lemon juice.
Toss spinach and radiccio until wilted.
Add rest of ingredients and pasta, except cheese.
Toss and fluff.
Sprinke with grated parmeson to taste.
Serve and enjoy!
