Mom's Scalloped Potatoes

We love these potatoes at my house. Difficult to describe but wonderful to eat! |
Ingredients: |

2 lbs |
|
Medium Potatoes |
|
3 T |
|
Margarine |
|
1/4 c, |
|
flour |
|
2 1/2 c. |
|
whole milk (more, if needed) or half & half |
|
1/4 c. |
|
chopped onion |
|
1/2 c. |
|
cooked ham chunks |
|
|
|
salt and pepper to taste |
Directions: |
|
Heat oven to 350 degress. Melt margarine in sauce pan, on low/med heat, add salt and pepper. Mix flour with some of milk (I use a "shaker" for this) and then add to the melted butter, stir with wire whip and add milk. This will thicken. While thickening peel potatoes and slice thin (I use a slicer). In a greased 2-qt or 9x13 pan, put the sliced potatoes, onion, white sauce, and ham chunks - mix well. Cover (with foil), bake 30 minutes, uncover and bake 60 to 70 minutes longer or until potatores are tender. Let stand 5 to 10 minutes before serving. (Main dish if you put in more ham)
