Miniature Corn Muffins

  Super easy, miniature corn muffins from scratch. I use Silk soymilk (vanilla or plain) instead of milk.
Ingredients:
  2/3 cup   cornmeal
  1 1/4 cups   flour
  1/3 cup   sugar
  1 Tbsp   baking powder
  1/2 tsp   salt
  1/3 cup   canola oil
  1 cup   milk or soymilk
Directions:
  Mix the cornmeal, flour, sugar, baking powder and salt in a bowl. Add the oil and milk and mix just until moistened.

Spoon into miniature muffin cups sprayed with nonstick cooking spray, filling 1/2 full. Bake at 350 degrees for 13 to 15 minutes or unbtil golden brown.
