Mexican Rice Pilaf

An authentic 'Spanish Rice' which is not your everyday red variety. Stir in beans or fried cubes of plantain at the end for a simple meatless meal. |
Ingredients: |

1 1/2 tbsp |
|
oil |
|
1 1/2 cups |
|
white rice |
|
1 |
|
white onion, minced |
|
2 |
|
garlic cloves |
|
1 3/4 cups |
|
chicken broth, (14 oz) |
|
1 tsp |
|
salt |
|
3 tbsp |
|
parsley, flat leaf, chopped |
Directions: |

Heat oil over medium heat in a saucepan with a tight fitting lid. Add rice and onion and stir until translucent but not browned. Adjust heat if necessary. Add garlic and stir until fragrant. Add broth and salt and bring to a boil. Cover, reduce heat to low and simmer 20-25 minutes. Remove from heat and let stand 5 minutes before serving. Fluff with a fork and add parsley.
