Meatloaf Casserole

A one pan meatloaf meal. All the things you put with the meal but baked in one pan. EASY! |
Ingredients: |

2 lb |
|
hamburger |
|
1 lb |
|
potatoes, sliced thin |
|
1 lb |
|
carrots, shredded |
|
1/2 c |
|
ketchup |
|
1/4 c |
|
brown sugar |
|
1/4 c |
|
mustard |
|
1 can |
|
evaporated milk |
|
1/4 c |
|
oatmeal |
|
2 ea |
|
eggs |
Directions: |
|
Mix the hamburger, eggs and oatmeal well in a large bowl. Set aside.
Using a 9 x 13 pan spray with vegetable oil. Layer as follows: sliced potatoes and then the shredded carrots. Dump the can of evaporated milk over the sliced/ shredded veggies. Spread the hamburger mixture over the top of the vegetables like a normal meatloaf.
In small bowl, mix the brown sugar, ketchup and mustard together. Spread over the top of the hamburger.
Bake in a 350* oven approximately one hour or until the meat is done through.
