Combine 1 1/2 cups cheese with green onions, salsa, cilantro and cumin in a medium bowl. spoon 1/4 cup mixture down center of each tortilla. Roll up; place in seam-side down in greased 11x7 inch baking dish. Spoon enchilada sauce over enchiladas. Cover with Foil and back at 350 for 30 min. Uncover sprinkle with remaining cheese and let stand until cheese is melted. Top with sour cream, chopped tomatoes, and avocado if desired.
