Marj's Yummy Vegetarian Burritos

Ingredients: |

large flour tortillas |
|
1 cup |
|
brown rice |
|
1 package |
|
Yves vegetarian ground beef |
|
1 |
|
red bell pepper |
|
1/2 packet |
|
taco spice |
|
1 cup |
|
shredded cheese, cheddar or jack |
|
|
|
salsa |
|
|
|
sour cream |
|
1 can |
|
vegetarian refried beans (or black beans) |
Directions: |

Slice bell pepper into strips, saute on medium heat in pan sprayed with nonstick spray (or use a little olive oil) until a little softened.
Cook brown rice according to package. Warm fake meat in pan with the taco mix and a couple tablespoons of water. Careful not to burn bottom.
Heat beans in microwave.
Heat each tortilla in microwave for 10 seconds before serving.
Layer each burrito with rice, beans, fake meat, bell peppers, cheese, salsa and sour cream.
Easily adjustable. Figure 2 tortillas for each person.
