Maple Glazed Sweet Potatoes

Ingredients:
  1.50 lb   Sweet Potatoes, cut into 2 inch pieces
  1/2 t   Kosher Salt
  1 T   Olive Oil
  1 T   Pure Maple Syrup
  Pinch   Cinnamon
Directions:
  Preheat oven to 425 degrees. In a small bowl, combine the olive oil, maple syrup, salt, and cinnamon. Toss the cut potatoes in with olive oil and then lay out evenly onto a parchment lined baking sheet. Roast for 20-25 minutes or until soft and tender.
