Life Changing Red Velvet Cupcakes with Cream Cheese Frosting

  These Super Easy Cupcakes are sure to be popular with kids and adults alike!
Ingredients:
  1 box   devil's food cake mix
  3   eggs
  1 c.   water
  1/3 c.   oil
  1 T.   red food color
  1/2 c.   butter, softened
  1 (8 pz.) pkg.   cream cheese, softened
  1/2 bag   powdered sugar
  1 tsp.   clear vanilla
    sprinkles
Directions:
  Preheat oven to 350 degrees F. Line 12 muffin cups with paper liners of choice.

Mix cake mix, eggs, water, oil, and red food color. Fill muffin cups 2/3 full. Bake 20 min. Cool completely.

Whip together butter, cream cheese, powdered sugar, and vanilla. Add additional powdered sugar, 1/4 c. at a time, or milk, 1 tsp. at a time, to achieve desired consistency. Pipe frosting onto cupcakes. Immediately top with sprinkles. Refrigerate, uncovered, for 2 hours - overnight to allow frosting to set. Serve.

Cupcakes may be covered and stored up to an additional 48 hours before serving.
